| Cooking with Jim Here is a nice pork recipe for these cold winter evenings! Spicy Pork Tenderloin 2 pork tenderloins 1 package onion soup 2 tablespoons butter 1 cup sour cream 4-5 medium potatoes 1 tablespoon flour 2-3 cups hot water Cut tenderloin crosswise in ˝ inch slices. Melt butter in cast iron skillet. Quickly brown tenderloin slices. Reduce heat and cover and sauté for 20 minutes. Peel potatoes, cut in slices thicker than pork slices, brown in skillet. Dissolve ˝ package onion soup in 2 cups hot water and pour over meat and potatoes. Simmer about 1 ˝ hours until pork is tender. If water evaporates add more. Add remaining ˝ package onion soup to sour cream and stir in flour. Ten minutes before serving pour mixture into skillet and stir gently. Heat well but do not allow to boil. Serve with spiced apples or crabapples. Enjoy! | |
